I have made these carrot cupcakes and they are so yummy. I haven’t made carrot cake in a while but its one of those comforting flavours that never disappoints. They are soft and fluffy and although they have carrot in them they are still light.
This recipe makes around 24 cupcakes, which seems like a lot but they don’t last long here! The cupcakes freeze really well, just take them out of the freezer two hours before you need them and they will defrost perfectly.
Millionaire shortbread’s used to be one of my favourite treats. I would always get them from our local bakery. The buttery biscuit base with the soft caramel and crisp chocolate is so good!
